  • 6 chicken thighs, bone-in and skin-on

  • 2 bay leaves
  • 1/2 cup water
  • 2 tablespoons vegetable oil

  1. In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Once hot, add the chicken thighs and cook until browned on both sides, about 4-5 minutes per side.
  2. Remove the chicken from the pot and set aside.
  3. In the same pot, add the garlic and cook until fragrant, about 1-2 minutes.
  4. Add the vinegar, soy sauce, brown sugar, black peppercorns, and bay leaves to the pot and stir to combine.
  5. Add the chicken back to the pot and stir to coat with the sauce.

  7. Reduce the heat to low and simmer the chicken for 30-40 minutes, or until the chicken is cooked through and tender.
  8. Once the chicken is cooked, remove it from the pot and set it aside.
  9. Increase the heat to high and let the sauce reduce and thicken, stirring occasionally.
  10. Once the sauce has thickened, add the chicken back to the pot and stir to coat with the sauce.
